It breaks my heart a little that no one’s here to share this because this might be the best tasting thing I’ve ever made. 🤸🏽♀️and my first time buying wild mushrooms! Do they EVER look wild 🍄🍄🍄 Truffle, Cremini, and Wild Mushroom Soup 🥣
The mix of mushrooms has been slow-cooked down to a juicy meaty texture in a dark brown salty miso garlic broth, with shredded bok choy, and the texture variation of a little okra and a few whole tiny purple potatoes softened to perfection. 🥣 Currently pairing with red wine 🍷
Recently I fell in love with truffles and officially cannot get enough. The little jar I had of minced truffles packed in oil was perfect addition to the fresh mushrooms I scored today.
The best part is that the whole pot will leave me with leftovers (though I’ll probably eat way too much) and cost maybe $7.
